Aussie fried onions

  • Thickly sliced onions

  • Oil

Whether frying onions in a pan or on a barbeque griddle, slightly reduce the amount of oil you would normally use. Then when the onions are beginning to brown and the pan is sizzling, tip a quarter of a glass of any Peak Ale (that happens to be in your hand at the time) over the onions to re-hydrate them and add an exquisite tang.
