Easy, No Fat, Friut Loaf

1lb dried fruit

500ml Bakewell Best Bitter

2 mugs self-raising flour

1 mug soft brown sugar

1 egg – beaten
Recipe
Place the fruit, Bakewell Best Bitter and the sugar into a large saucepan.
Simmer slowly for 20 minutes
Allow the mixture to cool.
Stir in the flour and add the beaten egg.
Turn into a greased and lined 1lb Loaf Tin.
Cook in moderate oven (300F/G2/150oC) for 1_ hours
Test with skewer. When ready, cover with a tea towel and allow to cool.
This allows the outside of the loaf to stay moist.
When completely cooled, wrap in greaseproof paper and store in an airtight tin.
Will keep for 3-4 days.
Serve sliced, with butter for afternoon tea!
